Although I am aware there is a get mailbox command available if you are an admin but I cant use that.
I am trying to create a powershell script to fulfill point 1, failing that point 2:
1. Identify and edit the permissions for various folders and subfolders to share the folders with a specific email. This is doable via GUI by the user themselves but is long winded and tedious.
2. Shift all the subfolders from the mailbox into another folder not in the mailbox
